Determination of Parameters of Chitosan Extraction from Shrimp Shell

Shrimp waste is the most important chitin source for commercial use. In this study chitin and chitosan were extracted from Indian white shrimp (penaeus indicus) waste collected from Persian Gulf in south of Iran by chemical and microwave methods that characteristics of chitosan play an important role for application. The effect of different condition of chemical and microwave methods on extraction, physiochemical, proximate composition and solubility, of biopolymer chitosan was examined. No clear seasonal variations were found for the content of these main components of shrimp shells (Moisture and ash). The shrimp shells had very low lipid content. The end product had a white color, high solubility and low ash, protein and moisture content.
