چکیده مقاله:

Nanostructured lipid carriers (NLCs) are a new generation of lipid nanoparticles which have exhibited some merits over traditional used lipid nanoparticles in fortifying food and beverages. The stability of nanoparticles during time is one of the important properties of this nano dispersion. Coating with different biopolymers such as chitosan, alginate, and low methoxy pectin enhances stability of this colloidal system. These hydrocolloids can form strong interfacial film and thus could improve the stability of NLC. Effects of molecular weight and amount of used hydrocolloids and their crosslinking degree on the physicochemical properties of nanoparticles were documented. Also release rate of bioactive compound entrapped within NLC could be controlled by changing the molecular weight of hydrocolloid. These results will be creative for better understanding of the preparation and stability of NLC.
