Evaluation of quality of tropical honeys, Dan, Astragalus, Kenar and forty plants supplied in Kazerun city in terms of sucrose percentage

Sucrose is the scientific name for sugar, which is made up of two molecules, glucose and fructose. In this study, ۹۰ honey samples from honey shops in Kazerun city wereprepared by random-cluster sampling method during spring (۴۵ samples) and summer ۱۴۰۰ (۴۵ samples) from Kazerun stores and after preparation to the laboratory. Sucrose of the samples was calculated based on the measurement of the degree of deflection of polarized light by Bogdanov & Baumann method using a polarimetricdevice. ۶ of the spring samples and ۸ of the summer samples had more than ۵ g of sucrose. The results showed that the lack of natural nectar and pollen during overwintering and beekeepers' use of sweet dough and homemade pollen cake and not giving honey a chance to break down (opportunity to break down sucrose into glucose and fructose) could lead to higher levels of honey sucrose. Spring is more impressive than summer.
