Opuntia ficus-indica cladode mucilage is a natural polysaccharide-rich biopolymer that has attracted increasing attention due to its multifunctional properties and broad industrial applicability. This review provides an updated overview of its composition, physicochemical characteristics, extraction techniques, and food-related applications. The mucilage, composed mainly of neutral sugars, uronic acids, proteins, and minerals, exhibits excellent gel-forming ability, high water-holding capacity, and rheological versatility, which are affected by plant origin, cladode maturity, and processing conditions. Extraction methods play a key role in determining yield and functional properties. Conventional aqueous extraction combined with mechanical treatments is widely used but may result in partial thermal degradation. In contrast, advanced techniques such as ultrasound-assisted extraction (UAE) and microwave-assisted extraction (MAE) improve mass transfer and cell disruption, leading to higher yields and improved physicochemical characteristics. Post-extraction steps, including centrifugation, solvent precipitation, and drying, further influence product purity and stability. In food systems, Opuntia ficus-indica cladode mucilage has demonstrated strong potential as a stabilizer, thickener, emulsifier, fat replacer, and encapsulating agent. It is also widely applied in edible films, active packaging, and microencapsulation systems due to its biodegradability and functional versatility. Overall, it represents a sustainable alternative to synthetic additives for the development of advanced food systems and sustainable biopolymer-based materials.
