Information about paddy physical and milling properties can be lead to optimized design for tools andmachinery concerning of rice product. Furthermore, it provides the possibility of correct settings for millingmachines with minimal break. The objective of present study is determination of physical and milling propertiesfor three common paddy varieties in Guilan province including Hashemi, Khazar and Gilaneh in two millingmoisture contents used in regional milling factories (8.5 and 10.5 % w.b.). Results showed that the effect ofvariety was significant on the entire studied physical and milling properties. Further, the effect of moisturecontent on all the measured attributes was significant except sphericity, length to width ratio and weight of 100-grains. The highest and lowest variations in dimensions with increasing moisture content belonged to width(1.35%) and length (0.6%), respectively. According to the results, milling recovery and head rice yield wereincreased significantly with decreasing the moisture content from 8.5 to 10.5% (w.b.). Among the investigatedvarieties, Hashemi variety had higher milling quality than both Khazar and Gilaneh varieties.
