DAILY DIETARY INTAKE OF COPPER BY TOTAL DIET STUDY (TDS) METHOD IN POPULATION OF SHIRAZ, 2016

Background and Aim: Estimation of essential element intakes is crucial to evaluate the risks of deficiency or toxicity. The purpose of this study was done inorder to evaluation of copper dietary intake with total diet study (TDS) method in population of Shiraz.Methods: A total of 600 individual foods were collected, prepared and cooked prior to analysis. Food consumption data were collected by means of a Food Frequency Questionnaire (FFQ). Analytical quantification was performed using Inductively Coupled Plasma-Optical Emission Spectroscopy. Finally the dietary intake level of this metal was obtained on consumed food.Results: The results of this study showed that the average daily intake of copper in the diet of Shiraz s population was 3800.75µg/day. Dietary intakes of Cu was 10/53 % of the respective provisional tolerable weekly intakes (PTWIs). The daily copper intake was higher than the RDA value. On the other hand health risk index (HRI) for copper in the diet of Shiraz s population was less than 1. Conclusion: Dietary intakes of copper was enough in Shiraz s people diet. Using refined water is highly recommended due to the important role of water in absorbing copper intakes. Besides, improvement of agronomy methods in fruit gardens is an inevitable necessity.
