چکیده طرح پژوهشی:
In this study handling conditions and harvesting process that could affect on quality loses of cultured shrimps during the handling of shrimps to the shrimp processing factories have been studied. Research inspection and assessments on cultured sites during harvesting and so unloading times in shrimp processing factories have performed in Bandar Abbas. The results have taken from recorded times and temperature during preparing and handling the cultured shrimps after harvesting prosses including : ponds temperatures, 84 chilling times, shrimp body temperature after chilling, the temperature of metabisulfit tank, the time span that shrimps remind in metabisulfit. The shrimp temperature after taking out the shrimps from metabisulfit tank and finaliy taken the spent time for ice packing, have performed in shrimp culture sites. On the other hand the sample precessing have done just the baskets of shrimps were transfered to the cold storage . the measured indices were including: organeoleptical indices (The percentage of read heads , soft head and broken head disorders) , the shrimp body temperature during handling to the factory, TVN (Total volatile nitrogen) , pH , the rate of metabisulfit absorption in shrimp muscle total count of micro organisms, total count of coli forms, E.coli and vibrio parahemolyticus. In order to elimination of some spare time and reduction the duration of preparing process and the handling and so leaving the shrimps have been lived in cold water. The physical damages and finaly quality preservation of shrimp during transportation to the factory, a procedure depend on exploitation of CSW system accompanish with met.bi.sulfit in suitable concentration were recommend and compaired with current procedures (like handling). The results about average of primary cold tanks temperature belong to 3 studied companies were 3. 0.7 and 6.2 respectively. These results doesn't show any significant differentiation (P> 0.05). The obtained results of organoleptic tests show that there isn't any significant differentitation among the both three studied companies and purposed recommendation (P> 0.05). Apparenly by consideration to the maximum and Minimum of obtained results and recomended procedure there isn't any significant differentiation between the obtained results that maybe due to extra dispersion of achived dates for each company. Results for organeoleptical estimation (red head, Soft head and Physical damages) show that there isn't any significant differentiation between three under studied companies (P> 0.05). But by attention to the minimum and maximum of obtained information and recommended procedure between three under studied companies, the truth demonstrated that recommended procedure is more ideal respect the current procedures. The average of shrimps head red disorders for the companies (No, 1, 2 and 3) were mesured %5-9, %0.7 and %9.4, average of softness and head flaging disorders %2.9, 85 %1.5 and %4.9 and the body fractures %1.6, %2 and %4.2 respectively, Where as these indicases were zero (O.W ) for recommended procedure. Statistical analysis of TVN for the 3 companies and the recommended procedure shows a significant differentiation (P<0.05). The average of total volitile nitrogen for the studied companies were recorded 18, 20.8 and 22.9 respectively. So these average for recomended procedure were recorded % 14.5 mg (with basket) and %14.7 mg (without basket) respectively. The result of microbial experiments didn't show any contaminations. So these results indicated that there haven't had same partial sanitation during harvesting and handling. On the other hand there haven't had enough time for growing the micro organisms . Although the high density of metabisulphite were effective to prevention of disease and disorders. Total information and results indicated that due to discorrect managements the shrimp handling in Hormozgan province and other misapplications and unconventional stand stills, the times and temperature are not desirable. So this is necessary that these procedure would be reconsider and introduce the correct procedures. The problems were limited in recommendated procedure stages and process and so the fals and human failures would be reduce. So with the CSW procedure, the shrimps could be preserved over 14 hours without organeoleptical damages.
