چکیده مقاله:

Today s competition in the industry is very close to increase consumer acceptance, improvequality and reduce product costs. By increasing the awareness of consumers about theinteractive role of food and health, consuming products that in addition to securing energy, havenutritional values as well as medicinal and therapeutic properties is taken into consideration .Meantime functional foods in the form of pills, powders or capsules as short–term foodsupplements or prebiotic, probiotic and useful living microorganisms added in nutritionalfunctions , play an important role in the health of the community. Some of the reasons ofhuman’s need for functional food are; increasing population of elderlies, the desire of peopleto improve their life quality, increasing health care costs , which entered cycle of productionand industry with aims of optimizing nutrition values and enhancing the body s safety, understress, reduce the risks of diseases ,prevention and treatment. One of the factors influencing theproduct is the consumer s acceptance of product’s taste that should be acceptable. Other factorssuch as the age and gender of consumers also have significant impacts on product success. Thedevelopment and trading of advanced products is very complicated, because it must respond tospecific consumer needs .This development requires effort and research .Identification ofcompound applied, physiological effects assessment, nutritional development with respect tobioavailability and changes during processing, consumer education and clinical trials onproduct effectiveness in order to obtain approval for marketing claims. Accepting consumersfrom the concept of applied food and better understanding the determinants of it as successfactors for market orientation, product development and success. Manufacturers should alsoprove their relevance to the role of the product in health of consumer, because in associationwith the elimination of misinformation for consumers allowed the product to present if it isefficient by international organization for consumer health and food management, such as theEuropean food safety authority (EFSA) and the USA food and drug administration (FDA).These products are a modern way to follow a healthy lifestyle and generally have a positiveattitude toward functional food and consumer.
