Different factors are involved in the removal of inorganic compounds from the shells of crustaceans. In this study,the optimization approaches for removal of inorganic compounds from chitin made from crab shell Portunus segnis were studied. Different factors such as type and concentration of acid, temperature, time, ratio powder to acid (w/v), method of extraction, powder size and shaker were optimized for chitin purification. The best yields in the removal of inorganic compounds were obtained with hydrochloric acid (99.05 ± 0.94). Some organic acid (acid acetic, acid lactic and mixture of them) showed a good potential for inorganic acid substitution for removal of inorganic compounds. In general, an increase in the concentration of acid (up to 10%), ratio powder to acid (w/v) (up to 1:20), temperature (up to 50°C) and time (up to 1h) were increased the efficiency of this process. But, excessive these factors increase the costs and negative effects on the chitin structure. Microwave and shakers save time in order to achieve the best efficiency. Also, reducing of sample size was increase efficiency. The optimization in the method of extraction can increase the quality of substance and save the energy, time and cost. Also, the results of this study showed that factors the type and concentration of acids, ratio of solvent to powder and particle size powder have a greater role in reducing impurities of chitin was extracted from crab shell
