The Industrial Internet of Things (IoT) is rapidly expanding, introducing a multitude of connected devices and applications that demand stringent network performance, including low latency, minimal jitter, and high reliability. Traditional industrial networks often struggle to meet these demands. Software-Defined Networking (SDN) offers a promising solution by decoupling the network's control and data planes, providing centralized management and programmability. The SDN controller is the core component of this architecture, and its selection is critical for the success of any IIoT deployment. This paper presents a comprehensive survey and comparative analysis of prominent open-source SDN controllers for IIoT applications. Moving beyond theoretical selection methodologies, we conduct an in-depth, feature-by-feature comparison based on criteria vital to industrial environments. We evaluate leading controllers such as Open Daylight, ONOS, and Ryu against metrics including performance, scalability, reliability, security, protocol support, and modularity. Furthermore, we introduce a generalized, procedural methodology to guide network architects in selecting the optimal controller for their specific IIoT use case.
