Natural honey in Iran's honey industries faces challenges related to adulteration (such as sugar addition) and low quality. This issue leads to reduced consumer trust (with ۴۰% reported adulteration cases) and affects marketability. This study aimed to investigate the application of biosensors based on glucose oxidase enzyme for adulteration detection, sugar content measurement, antioxidant properties, and sensory quality of natural honey. The research method involved constructing the biosensor using an electrochemical method, testing on natural and adulterated honey, and evaluating quality through electrochemical tests (potentiometry), antioxidant measurement with DPPH, sensory tests, and microbial analysis. Experiments were conducted on ۳۰ honey samples from northern Iran's hives, with results indicating adulteration detection with ۹۵% accuracy, reduction in adulterated sugar content up to ۵۰%, antioxidant activity increase up to ۳۰%, and increased sensory score from ۶.۶ to ۸.۳ on a ۹-point scale. Additionally, honey stability extended to ۶ months. This method can be applied in Iran's honey industries to produce honey with higher quality, emphasizing biosensors for sustainability and consumer trust.
