Non-Thermal Processing Technologies in the Juice Industry: Preservation, Bioactive Retention, and Quality Enhancement

Non-thermal processing technologies have revolutionized the juice industry by providing alternatives to conventional thermal pasteurization, ensuring microbial safety while preserving bioactive compounds, sensory attributes, and nutritional quality. High-pressure processing (HPP) at ۴۰۰-۶۰۰ MPa for ۳-۵ min achieves ۵-۶ log reductions in pathogens like E. coli and Salmonella in orange and apple juices, retaining >۹۰% vitamin C and polyphenols such as hesperidin (۲۰۰-۵۰۰ mg/L). Pulsed electric fields (PEF) at ۲۰-۴۰ kV/cm for ۱۰۰-۲۰۰ μs inactivate enzymes like pectin methylesterase (PME) by ۹۵%, enhancing cloud stability in citrus juices without significant loss of flavonoids (quercetin, naringin at ۵۰-۱۵۰ mg/L). Ultrasound (US) at ۲۰-۴۰ kHz for ۱۰-۲۰ min improves extraction yields by ۲۰-۳۰% in berry juices, boosting anthocyanins (cyanidin-۳-glucoside >۱۰۰ mg/L) via cavitation-induced cell disruption, while cold plasma (CP) at ۱۰-۲۰ kV for ۱-۳ min generates reactive species (ROS, RNS) for ۴-۵ log inactivation of yeasts like Zygosaccharomyces bailii, with minimal impact on total phenolic content (TPC ۵۰۰-۱۵۰۰ mg GAE/L). These technologies minimize Maillard reactions, preserving fresh-like flavor (aldehydes <۵ mg/L) and color (L* >۷۰), as per hedonic scores >۷/۹ in consumer panels. Bioactive retention is superior; HPP preserves ۸۵-۹۵% carotenoids (ẞ-carotene ۱-۵ mg/L), PEF enhances bioavailability by ۱۵-۲۵% through irreversible membrane poration, US synergizes with enzymes for ۳۰% higher polyphenol yield, and CP oxidizes pesticides (chlorpyrifos <۰.۰۱ mg/L) without degrading antioxidants. Microbial safety aligns with FDA Juice HACCP, with ۵-log reductions validated by ISO ۱۱۱۳۳ methods. In applications, HPP dominates commercial juices (e.g., Naked Juice), PEF in cloudy apple juices for PME inactivation, US for cold-pressed trends, and CP for emerging decontamination. Regulatory approval under EU Novel Food Regulation and FDA GRAS status supports scalability, though challenges like equipment cost ($۰.۱-۰.۳/L) and scale-up persist. Iranian juice sector, producing >۱ million tons/year, benefits from local orange juices, where HPP retains limonin (bitter compound) <۱۰ mg/L, enhancing export quality per ISIRI standards. Synergistic combinations (HPP+PEF) achieve >۶ log inactivation with ۹۸% bioactive retention, extending shelf life to ۳۰-۶۰ days at ۴°C. Future innovations include hybrid systems with ohmic heating and AI-optimized parameters for personalized juices. Overall, non-thermal technologies bridge safety and quality, supporting clean-label demands and sustainable production in a $۲۰۰ billion industry.
