This research explores the use of ultrasound-assisted extraction as an eco-friendly approach for extracting collagen from the skin of Napoleon wrasse (Cheilinus undulatus), a species that has not been extensively studied for its collagen content. The main aim was to investigate a more sustainable and effective extraction method compared to conventional techniques. Proximate analysis of the fish sample indicated a protein content of Y.,,%, establishing a baseline for estimating the collagen content. Ultrasound extraction involved varying durations (*, •, Y.,. minutes) and different acid types (acetic, lactic, citric acid), with collagen yields evaluated for each condition. The results revealed that ultrasound-assisted extraction significantly increased collagen yield, with both extraction duration and acid type demonstrating a notable impact. The highest collagen yield (۹,۰۷ ± ۱,۱%) was obtained using citric acid, followed by lactic acid (۰,۹۹ ±۱,۹%) and acetic acid (۲)±%). Collagen purity was confirmed through UV absorbance spectroscopy, which consistently showed a maximum absorption peak at Y nm across all acid treatments. This study illustrates that ultrasound-assisted extraction can enhance collagen yield.
