Nowadays, the use of additives in the food industry has gained double importance, so that it is inevitable not to use additives. Sodium benzoate is one of these additives that plays a major role as a preservative in preventing microbial spoilage of many food products produced in the industry. It seems that due to the inevitable use of sodium benzoate to prevent the growth of microorganisms and considering all the benefits that sodium benzoate can have, the use of this substance must be controlled. The amount of sodium benzoate used and its purity are of great importance because if its purity is inappropriate, harmful substances enter the food. The more important point is that the indiscriminate use of this substance in order to hide non-standard production and lack of hygiene in the production of food products causes problems related to the health of consumers. Electrochemical sensors can play an important role as an effective method in identifying the amount of sodium benzoate. In this article, various aspects of the application of this technology are mentioned.
