چکیده مقاله:
Potato plant with scientific nameSolanum tuberosum contains nutrients such as protein,carbohydrates, minerals, vitamins and antioxidant compounds. Each of these compounds has aspecific functional role in the body and forms an important part of the diet. Today, with theincrease in food processing around the world, production waste is also increasing. The producedwastes contain useful compounds remaining, and obtaining these valuable compounds withvarious recycling methods greatly reduces environmental pollution, and also has a signific antimpact from the economic aspect and cost reduction. The wastes produced from potatoes indifferent stages of processing include potato peel, potato pulp and water (wastewater). Thesewastes contain compounds such as protein, cellulose, hemicellulose, p ectin, and starch.Fermentation is one of the methods that reuse materials and wastes with specific goals such asproducing enzymes, pigments, ethanol, and increasing nutritional value. In this study, the use ofpotato waste to produce useful compounds and their use in the food industry with the help ofsolid state fermentation, which is a type of fermentation, has been discussed.
