Introduction and purpose: Nitrate in agricultural products and the risk of cancer caused by it are important challenges. Therefore, the present study was conducted with the aim of investigating the relationship between the nitrate concentration of vegetables and summer herbs consumed with the prevalence of gastrointestinal cancers in Minab city.Methodology: This study was conducted as a case-control study in Minab city. Information was collected through a questionnaire and experiments were conducted by measuring nitrate concentration in vegetables and herbs consumed in two groups, case and control. The collected data was analyzed using SPSS version ۱۶ statistical software.Findings: Out of ۶۰ patients (cases) diagnosed with cancer, ۲۴ were women (۴۰%) and ۳۶ were men (۶۰%). ۲ and ۳, it was checked that in region ۱, which was mostly engaged in agriculture, the concentration of nitrates in consumer products, including leafy vegetables, was high. The most common cancer in the case group was stomach cancer of ۳۷ people (۶۱.۷%).Discussion and conclusion: According to the obtained results, there has been a significant relationship between the nitrate concentration of drinking water and the prevalence of gastrointestinal cancers in the study areas. Therefore, taking into account the finding that the main route of exposure to nitrates is through the consumption of food, especially vegetables, therefore, nitrates consumed through vegetables and herbs can be one of the possible risk factors for gastrointestinal cancer in these areas.
