Characteriz ation of Į- amylase in Ardabil honey

In honey there are many component Į- glucosidase (invertase), Į- and ȕ - amylase (diastase), glucose oxidase, catalase and acid phosph atase .over the years, the amylase compone nt of honey has received attention a s a freshness indicator [۲]. The enzyme activity in honey has been widely stud ied for many years[۱-۲-۳]. The aim of this study was to optimization method assay starch-iodine f or determining activit y sample of honey from beekeepe r and consi der effect te mperature stability of amylase honey.
