چکیده مقاله:

Food analysis is essential in monitoring of food quality for risk assessment regarding public health. Traditional techniques can meet the requirement of routine food analysis in laboratory. However, serious food safety situations urgently demand rapid, time-saving, low-cost analysis methods even on-site, portable and household testing kits. Fluorescence analysis exhibits immense potential for food safety owing to its remarkable advantages of high sensitivity, ease of operation, low cost and rapid result outputs. As a new class of promising fluorescent nanomaterials, carbon quantum dots have been well developed in recent years for their excellent fluorescent properties, simple synthetic approaches, good biocompatibility and various detection applications, which can be expected to replace the traditional semiconductor quantum dots. In this paper, we reviewed the production of carbon dots, their fluorescent properties and applications in food analysis such as food additives detection, heavy metal ions monitoring, pesticide detection, toxins detection and food nutritional components analysis.
