Pesticides are a group of chemicals that are widely used today to control agricultural pests. The residual presence of pesticides in crops and livestock has adverse effects on human health. Deltamethrone is one of the pesticides used in different parts of Iran. Pesticides are likely to be present in livestock products such as animal butter, and the consumption of such products will pose a huge risk to consumers. The aim of this study was to investigate the effect of heat on the level of deltamethrin in buttermilk. 290 μg / kg deltamethrin was added to the butter samples and the samples were subjected to heat treatment of 80, 90 and 100 degrees Celsius. Sampling was performed at 0, 30, 60, 90 and 120 minutes. The toxicity of deltamethrin was determined by high performance liquid chromatography. All heat treatments were performed in three replications. The results showed that there was a significant difference between the amount of toxin in the control and heat treated samples. The highest decrease in deltamethrin was observed at 100 ° C for 120 minutes and the lowest at 80 ° C for 30 minutes. According to the results, the higher the temperature and the longer the temperature, the greater the effect of heat on reducing the toxin deltamethrin.
