چکیده

Solid-Phase Microextraction (SPME) is a relatively new sampling technique, which is used for a single step extraction and pre-concentration of volatile compounds, SPMe consists of an injector-like holder with a needle inside coated with SPME fused silica fiber, Fiber type, extraction time and temperature are the main parameters affect the sensitivity and reproducibility of this method. Polydimethyl siloxane (PDMS), divinylbenzene (DVB)/PDMS, carboxen (CB)/PDMS and polyacrylate (PA) are commonly used SPME fiber coatings, In SPME technique, fiber is released into the headspace of sample, which is already placed in the special vial sealed with a septum type cap. By moderate heating, volatiles of the sample transfer to headspace and later adsorbed onto fiber. Upon equilibrium of volatiles of volatiles among matrix, headspace and fiber, SPME injector is directly inserted to the injection port of gas (GC) or liquid chromatography (LC) equipments. Identification and quantification of volatiles are done by using GC/LC-mass spectrometry or by comparison with retention time of standard compounds. SPME has been successfully used for determination of volatile profiles of different food products such as cheeses, berries, beverages, seed oils, etc. SPME has also been used to analyze oxidation products of lipids as hexanal, which is known as a secondary oxidation product of lipids.
