Primary metabolites such as carbohydrates, amino acids, fatty acids, chlorophylls and etc. were found Secondary.in all plants. Unlike primary compounds, secondary metabolites are present in some plants only normal growth, development or reproduction of an organism. metabolites are not directly involved in the Fatty acids, especially unsaturated fatty acids, are important as nutritional substances and metabolites in living organisms. Many kinds of fatty acids play an important role in the regulation of a variety of physiological and biological functions There is currently scientic interest in studying polyunsaturated fatty acid sources due to correlation between these fatty acids (omega-3 and omega-9) and the prevention of cardiovascular disease and the reduction of LDL cholesterol levels among other benefits. Pinus eldarica (Pinaceae) is a tree, 12-15 m tall; bark brownish-gray or light gray, not flaking; head broad-topped. Leaves stiff, green, 6-9 cm long. In this study, plant material was collected on June 2016 in Birjand area. The extract was obtained by n-hexane as solvent, using a Soxhlet apparatus for 12h. The fatty acid (FA) compositions of seeds were determined by GC-MS as methyl ester derivatives after transmethylation reaction. The results revealed that linoleic (C18:2n6) (48.3%), and oleic (C18:1n9) (23.20%) were the main unsaturated FA. Palmitic (C16:0) (6.14%), and stearic acid (C18:0) (2.41%) is also the main saturated FA.
