چکیده مقاله:

This work aimed to study on the defect of carriers on the crystallization ad solubility of powder of pomegranate juice during the pocess of spray drying . Also the correlation of the microstructure of the powder with the functional properties as stickiness and solubility was studied . To perform this work , we used pomegranate juice with 40-50˚ Brix . Before being dehydrated , the juice was diluted to 12 ˚Brix and undertook addition from the following carriers : maltodextrin , Arabic gum and waxy starch in the concentration of 12% with addition of different concentration of cellulose . The powder was obtained through the use of a mini-spray dryer of laboratorial scale . Glass Transition Temperature (Tg) of spray-dried pomegranate powders were obtained using differential scanning calorimetry (DSC) method . Analyses of microstructure , stickiness , and solubility were performed on the obtained powder . The microstructure analyses showed that adding cellulose can prevent the amorphous aspect of spray dried powders . Among different carriers used in this work , Arabic gum , showed the best surface propertis and less stickiness.
