چکیده مقاله:

Yogurt whey and related dairy by-products are among the most challenging effluents generated by the dairy industry; however, they also represent rich sources of proteins such as β-lactoglobulin and α-lactalbumin. These proteins are promising precursors for the production of bioactive peptides with antioxidant, antihypertensive, and antimicrobial properties. Nevertheless, conventional approaches to the recovery of these peptides, which are primarily based on enzymatic hydrolysis and empirical purification, are not only time-consuming and costly but also unable to accurately predict the structural interactions between peptides and their target receptors in the human body. The emergence of artificial intelligence models in structural biology, particularly the introduction of AlphaFold ۳ (AF۳), has shifted the peptide discovery paradigm from largely empirical screening toward rational, structure-based design. Compared structure-based design. Compared with previous versions, AF۳ complex interactions among short peptides, target proteins such as angiotensin-converting enzyme (ACE), and small molecules. This article presents a novel computational framework for the in silico identification and structural analysis of bioactive peptides derived from yogurt by-products using AF۳.
