چکیده مقاله:

Quercetin is a naturally occurring flavonoid widely distributed in the seeds of Brassica L., Solanum lycopersicum, Pisum sativum L., and Beta species. Despite its diverse pharmacological activities, including antioxidant, anti-inflammatory, and antimicrobial effects, its therapeutic application is limited by poor aqueous solubility and low bioavailability. In the present study, supramolecular complexes of quercetin with glycyrrhizic acid (GA) and monoammonium glycyrrhizinate (MAG) were prepared to enhance its physicochemical properties and improve its potential biological performance. Water-soluble vitamins and flavonoids were quantified by high-performance liquid chromatography (HPLC) using an Agilent ۱۲۰۰ chromatographic system equipped with a diode-array detector (DAD), while the fatty acid composition was determined by gas chromatography with flame ionization detection (GC-FID). The molecular interactions within the prepared complexes were investigated by Fourier-transform infrared (FT-IR) spectroscopy, confirming characteristic changes in the absorption bands associated with hydrogen-bond formation and intermolecular interactions between quercetin and the glycyrrhizinate derivatives. Acute oral toxicity was evaluated in accordance with OECD Guideline ۴۲۰ using laboratory rodents following intragastric administration. The synthesized complexes exhibited favorable physicochemical properties and low acute toxicity, indicating that complexation with GA and MAG represents a promising strategy for improving the pharmaceutical applicability of quercetin. These findings provide a useful basis for the further development of glycyrrhizic acid-based quercetin delivery systems with enhanced biological potential.
