چکیده مقاله:
Active food packaging is considered one of the most advanced technologies in modern food industries, playing an active role in quality preservation, shelf life extension, and spoilage control in addition to its protective function. In recent years, the use of enzymes in active packaging systems has attracted considerable attention as an innovative, biocompatible, and intelligent approach. Enzymes such as Glucose Oxidase, Lysozyme, Lactoperoxidase, and Catalase have extensive applications in oxygen scavenging, microbial growth control, controlled release of active compounds, and development of responsive packaging systems. The aim of this review article is to investigate recent scientific advances regarding the application of enzymes in active food packaging systems, mechanisms of action, advantages, challenges, and future perspectives of enzyme-responsive packaging technologies
