Anise essential oil is a valuable natural compound with considerable potential in pharmaceutical and food-related applications; however, its high volatility, low stability, and sensitivity to environmental conditions limit its practical use. In the present study, a nanoemulsion-based delivery system was developed to improve the physicochemical stability and release behavior of anise essential oil. In order to enhance the performance of the system, the surface of the prepared nanoemulsion was modified using chitosan-hyaluronic acid coating. The obtained formulations were evaluated in terms of particle size, size distribution, surface charge, physical stability, and in vitro release behavior. The results indicated that the coated nanoemulsion showed improved stability compared with the uncoated system and exhibited a more controlled release profile. The polymer-coated formulation also demonstrated reduced initial burst release, which can be considered a favorable feature for sustained delivery applications. Overall, the findings suggest that chitosan-hyaluronic acid coating can be an effective strategy for improving the functional properties of anise essential oil nanoemulsions and may provide a promising platform for future bioactive compound delivery systems.
