Food safety, as one of the fundamental priorities of public health, plays a pivotal role in ensuring the quality of food products and reducing risks associated with biological and chemical contamination. With the increasing global consumption of perishable products like meat and fish, the need for rapid, precise, and cost-effective monitoring methods is more pressing than ever. Microbial contaminants such as Salmonella and E. coli, chemical pollutants including pesticides and heavy metals, as well as allergens like milk and peanut proteins, pose serious threats to consumer health and the sustainability of the food supply chain. In this context, biosensors, as an advanced technology, provide a novel solution for the rapid and effective detection of these hazards. Biosensors were first introduced in ۱۹۶۲ by Clark and Lyons for measuring glucose, consisting of a biochemical detection system and a physicochemical transducer capable of converting chemical information into analytical data. This study focuses on electrochemical biosensors, including voltammetry and amperometry techniques, examining their applications in identifying pathogens, contaminants, and allergens in food products. This advanced technology, utilizing nanomaterials and multivariate optimization methods, offers high sensitivity and on-site usability. This article, while analyzing the efficiency of biosensors in detecting bacteria, viruses, and chemical pollutants, also highlights their role in reducing food waste and improving monitoring of the food supply chain.
