چکیده مقاله:

The essential concept of sustainability refers to preserving the environment and natural resources for future generations. In terms of the food industry, though, this concept has both expanded and become more challenging. More generally, the food supply chain grapples with food waste, shortage of food, and the environmental effects of farming and food industry activity. With increasing international concern about climate change and the repercussions of food production activities, it is Life Cycle Assessment (LCA) that increasingly stands out among several methodologies as a key one for sustainability analysis and improvement of production systems. This approach helps in identifying key processes in the life cycle of a food product from cradle to grave so as to decrease adverse environmental impacts. The boundaries of this article include the emergence and importance of LCA, its different phases, its practical implementation among food industry, obstacles, and illustrative case analyses.
