Impact of Combined Vitamin C/Selenium Supplementation in Vegetable Oil-Based Diets on Broiler Performance, Blood Lipids, and Breast Meat Oxidative Stability

Enhancing chicken diets with vegetable oils improves the profile of beneficial fatty acids in meat but increases the rate of lipid peroxidation, emphasizing the need for dietary antioxidants. This research evaluated the impact of ۱۰۰ mg/kg vitamin C (Vit C) and ۱۵۰ mg/kg organic selenium (Se) on growth performance, carcass traits, serum lipid metabolites and lipid peroxidation in chicken breast meat when the diets included either rapeseed oil (RO) or pumpkin seed oil (PO). A total of ۴۰۰ Hybro male chicks were raised over ۴۲ days in a ۲ × ۲ factorial arrangement, comparing oil types (RO vs. PO) and nutrient supplementation (with or without Vit C/Se). Importantly, neither oil type nor supplemental antioxidants influenced growth performance and carcass traits. The findings showed no significant variance in malondialdehyde (MDA) concentrations in breast meat between different oil sources. However, serum lipid metabolite levels were notably lower in birds fed RO than those given PO (P<۰.۰۵). Supplementation with Vit C/Se consistently reduced MDA levels in breast meat, particularly on day ۷ (۰.۱۲۲ vs. ۰.۲۵۸ mg/kg, P<۰.۰۵). Additionally, total cholesterol levels decreased, while triglycerides significantly increased. In summary, Vit C/Se supplementation effectively lowered serum total cholesterol levels and improved oxidative stability in chicken breast meat, demonstrating its value in maintaining meat quality.
