Bacterial exopolysaccharides (EPS) are vital biopolymers used in biomedicine, food production, cosmetics, petroleum, pharmaceuticals, and environmental remediation. These high molecular weight polysaccharides (۱۰ to ۳۰ kDa) are biodegradable, pure, and exhibit various biological activities, including anti-inflammatory and antibacterial effects. Synthesized by bacteria during biofilm formation, EPS create a protective environment and are produced as heterogeneous polymers with diverse lengths and substitution patterns. Their hygroscopic and viscous nature makes them suitable for drug delivery systems, enhancing treatment efficacy and minimizing side effects. This overview will examine various types of EPS and their applications, particularly in drug delivery.
