Development of a Milk Spoilage Indicator

This study focuses on the development of a pH-sensitive indicator for detecting milk spoilage. The indicator,using Alizarin Red S and Phenol Red immobilized in a silica matrix via sol-gel processing, changes color inresponse to pH shifts due to lactic acid production during milk spoilage. Various preparation conditions,including precursor-to-solvent ratios, reaction temperatures, and surfactant types, were optimized. The bestresults were obtained with samples prepared at ۶۰°C, showing significant color changes, particularly withAlizarin Red S. Characterization methods included SEM, FT-IR, and UV/Vis analysis.
