Enhancing Data Integrity and Transparency in the Food Supply Chain: A Comparison of Traditional Process Mining Methods and Blockchain-Based Approaches

In this paper, process mining, one of the most important data analysis tools, has been examined. With the help of the design science research method, we have compared traditional process mining methods with blockchain-based methods. Process mining can benefit from the advantages of decentralized systems, such as the immutability of data and increasing the transparency and security of the system. Our case study is the food supply chain. This research aims to investigate and compare the efficiency and effectiveness of these two methods in the food supply chain. We implemented a process on the Ethereum blockchain platform using the design science research method. Process mining was performed once without the blockchain and once with data extracted from the blockchain. In the first case, we saw ۷۴% and in the second case, ۸۵% matching with the initial model. Obviously, if the smart contract code is written more accurately and can support different states of the theoretical model, this fitness rate will also increase. By comparing these two models in the mining process output, we realized that it is possible to store data on a blockchain platform (similar to traditional process mining methods) and discover the real process model after mining. The quality of data has increased in the new mode and the supply chain continues its work process with more transparency while maintaining the integrity and security of the system.
