چکیده مقاله:

Every year after fishing, large volumes of waste from aquatic processing are discarded as low value and non-consumable materials. These wastes include viscera, skin, head, etc., and due to their high perishability, their disposal causes environmental pollution. The products of these wastes can be used in various fields of medicine, food industry and cosmetics. Hydrolyzed protein from fish waste has attracted a lot of attention today due to its capabilities and functional properties. The aim of this study was to investigate the practical importance of hydrolyzed fish protein in order to create valuable and high-quality products. The results of this study indicate that hydrolyzed fish protein has several biological effects including antioxidant, anti-inflammatory, antihypertensive, anti-fat, anti-cancer, anti-neurological and etc. These properties can be due to the presence of bioactive compounds that provide the practical potentials for hydrolyzed fish protein in various food and pharmaceutical fields and can create a context for the production of value-added products with the aim of maintaining high quality and quantity.
