Nowadays, the development of various industries and different environmental pollutions hasbrought many toxic and dangerous elements into the food cycle of human societies in differentways. Unfortunately, these elements have endangered the lives of humans and possibly otherliving organisms. While heavy metals enter the body, they will rarely excrete and they willprecipitate into the tissues which can cause many complications and diseases.In this study, ۷۰ shrimp samples were collected during four fishing stages in the month of July,August, September, and October for ۲ consecutive years; in order to determine theaccumulation of Mercury heavy metal in the edible tissues of Penaeus Vannamei shrimps inBushehr breeding farms.The Mercury measurement was performed using the cold steam method. The results indicatethat the concentration of Mercury metal in the edible tissues of the sampled shrimps weighedbetween ۰ to ۰.۰۰۹ mg/kg wet weight; according to World Health Organization (WHO), thestandard wet weigh for Mercury metal is ۰.۱ mg/kg. Generally, the concentration of theMercury metal in the edible tissue of sampled shrimps is much lower than the global standardand does not endanger the safety of residents and consumers.
