چکیده مقاله:
One of the most crucial sections of the global economy in general, and Iran in particular, is the food industry. Food industry plays an important role for the processing of agricultural raw materials and supplying of the food. This sector is regarded as a weighty industry, however, the intensity of research projects is low.The innovations are considered as an important instrument for companies which focus to the food industry in order to compete with competitors and for satisfaction of customer expectations. In this regard, functional foods play an outstanding role, as proved by their increasing demand due to the importance of healthcare, desire of older people for the quality of their life, and life expectancy, to name but a few.The main target of this paper is to analyze the-state-of-the-art on functional foods. For this purpose, a review of extant literature is presented. Specific emphasis is laid on the definition and the main examples of functional food. The paper concludes with comments on future trends
