Background and Aim : The aim of the current study was to determine microbial contaminationof poultry plants in Kermanshah province based on the hazard analysis critical control points(HACCP).Methods : The microbial contamination of ۲۲۵ poultry meat in five poultry plants, located in theKermanshah, Iran, including Staphylococcus aureus, Escherichia coli, Salmonella spp. andListeria monocytogenes were evaluated using Baird parker agar, Eosin methylene blue agar,Salmonella Shigella agar, and PALCAM Listeria selective agar, respectively.Results : According to the results of this study, the highest level of contamination in terms of S.aureus, E. coli, Salmonella spp. and L. monocytogenes was found in the intestinal and visceralemptying (CCP۲) and the completion of intestinal and visceral emptying (CCP۳). The counts ofL. monocytogenes (۲.۲۵ log CFU/g), Salmonella spp. (۲.۳۱ log CFU/g), E. coli (۲.۴۱ log CFU/g)and S. aureus (۲.۱۸ log CFU/g) were decreased significantly after storing the product underrefrigerated conditions.Conclusion : Our findings indicate that, although, the microbial count of poultry carcassesdecreases after cooling, due to the cross-contamination with bacterial pathogens, particularlySalmonella spp. and S. aureus, improvement of the poultry plants and effective training of workersregarding hygiene is necessary.
