چکیده مقاله:

Background and Aim : Plant sterols are LDL cholesterol-lowering supplements, but they havelow dispersion and lack proper stability in biological conditions. One of the ways to solve thisproblem is to encapsulate them with other substances such as lipids. Methods : In this study, plant phytosterols extracted from Pistacia terebinthus seed oil andsqualene were nanoencapsulated by the lipids, starch, and cellulose under the coacervationtechnique without adding synthetic polymer surfactants in order to increase dispersion andstability. The properties of these products were identified by FTIR, UV-Vis, SEM, DLS, and GCanalysis. The effective variables in this process to optimize the particle size and lipid nanoparticleloading were prioritized by Box-Benken analysis. Results : According to the results, the particle size was ۵۰ nm and the phytosterol loading wasaround ۸۰ with high positive zeta potential. Antimicrobial activity and drug release ofnanocapsules were also evaluated. Aureus, L. acidophilus, and L. casei showed inhibition in thepresence of extracted nanocapsulated phytosterols compared to initial concentrations. Conclusion : It was also found that nanoencapsulated phytosterols have stability and releasecontrol and can be used as a good nanocarrier in drug delivery.
