چکیده مقاله:

Background and Objective: Today, the quality of food consumed is a major concern around the world. Seafood, especially fish, has a significant role in providing food of people around the world. The quality of the fish and seafood depends on the physicochemical properties as well as its status during storage. The purpose of this study was to evaluate the peroxide value, acidity and pH of canned tuna in Shahrekord.Materials and Methods: In this study, ۲۰ canned Tuna fish were collected in ۲۰۱۹ and then some chemical properties such as pH, peroxide value and acid value were analyzed according to AOAC standard.Results: The results showed that the peroxide value measured in all ۵ brands was below the standard limit (۲ meq/kg) and the acidity level was above the standard limit (۰.۱%). Also, the measured pH of canned tuna was neutral and slightly higher than standard.Conclusion: Because canned tuna is one of the most consumed food items, it is necessary to study the physicochemical properties of the oil used to prevent disease and maintain the quality of canned tuna.
