چکیده مقاله:

Background and Aim: Hydroxyl radical is a reactive molecule that may react with proteins, nucleic acids, lipids, and other moleculars, causing structural alterations and tissue damage. Also, compounds and reactions that consume and suppress these species or oppose their action are antioxidants. Therefore, our aim in this study is to identify oxidants and antioxidants (synthetic and natural) and to investigate the protective effect of antioxidants against human diseases.Methods: In reviewing and writing this article, articles indexed in SID, SCOPUS, PUBMED, MAGIRAN databases, as well as library resources and medical reference books were used. Results: Inside red blood cells and most other cells, several powerful oxides are created during metabolism. These oxides include super oxide, Hydrogen per oxide (H۲O۲), per oxides Radicals and Hydroxyl Radical (OH) and is called oxygens reactive species (ROS). Conclusion: An inverse relationship between antioxidant levels has been established, however, some recent studies have shown that supplements with one type of antioxidant may not be very effective. Based on most epidemiological studies and case control, concomitant use of proven antioxidants such as vitamins C, E, and food antioxidants is beneficial.
