چکیده مقاله:

Ferulic acid (FA) is a poorly water-soluble natural antioxidant with antimicrobial activity. This poor solubility limits its application in the food and pharmaceutical industry. Cyclodextrin nanosponges (CD-NSs) are a novel group of cross-linked CD derivatives which can be used to enhance the solubility of low-soluble bioactive compounds. In this paper we will deal with the encapsulation of FA into the NSs in the proportion of ۱:۴ (FA:NS). Diphenyl carbonate was used as a cross-linker. The release of encapsulated FA was evaluated in different food simulants and simulated gastrointestinal conditions. The antimicrobial acrtivity of FA and encapsulated FA was evaluated using minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC). The release of FA was enhanced after encapsulation in NS. Encapsulated FA showed higher antibacterial activity compared to free FA and MIC of free FA was decreased significantly after encapsulation in CD-NS. FA indicated a controlled release in different food simulants and simulated gastrointestinal conditions. Our results suggest that CD-NS can be a proper delivery system for hydrophobic compounds and FA-NS can be used as a potential preservative with enhanced antibacterial activity in food applications.
