The term heavy metal refers to any metallic chemical element that has a relatively high density and is toxic or poisonous at low concentrations. Examples of heavy metals include mercury (Hg), cadmium (Cd), arsenic (As), chromium (Cr), thallium (Tl), and lead (Pb). Heavy metals are natural trace components of the aquatic environment, but their levels have increased due to domestic, industrial, mining and agricultural activities, and considered as major environmental pollutants, and causes the cytotoxic, mutagenic and carcinogenic effect in animals. In this study, a Kawakawa (Euthynnus affinis) fish sample (a type of tuna fish from Persian Gulf) is used to prepare canned tuna. Initial preparation operations involving separating heads and emptying stomach, are performed on the fish, then the fish, is immersed for the period of 4 hours in the solution of 2.5% brine and 4 and 8 of bran rice (g/100 ml), at 0 to 4°C. At this stage, effect of adsorbent, pH of salt water solution on the possibility of reducing heavy metals (lead, cadmium, arsenic, mercury) are investigated. During the process of reducing heavy metals by rice bran, absorption rate of salt in different treatments are not significant (P<0.05). Adsorption capacity of the activated rice bran and rice bran are, As> Hg> Cd> Pb and As> Hg> Pb> Cd, respectively.
