Background and Aim: High cholesterol levels are associated with increased risk of chronic diseases. The influence of dietary cholesterol and saturated fat is so important that Connor et al (1) developed a cholesterol/saturated-fat index (CSI) to assess the effect of the diet on serum cholesterol levels. Persian food are a mixture of most nutritious ingredients including meat, rice, vegetables, beans and spices. This study aimed to construct nomograms of CSI index in daily meal of Iranian food in Naft Hospital.Methods: We comprises a list with 10 food items, which were scored for CSI, calculated according to the methodology cited in the study by Connor et al(1) with the formula: CSI = (1.01 x g of saturated fat) + (0.05 x mg of cholesterol) and USDA food composition databases.Results: Food s hypercholesterolaemic _ atherogenic potential relies on its cholesterol and saturated fat content.A low csi indicates low atherogenicity. There were some foods with high csi like Zucchini stew(CSI:36),Split lentils potatoes and beef stew(39) and kebab(38).We investigated some foods like herbs stew(ghorme sabzi) with veal(22.5). Conclusion: Food items with csi below 30, according to the references are appropriate for patients with heart disease but the others should be given with caution.
