Effect of diets containing hydrogenated vegetable oils and animal oils on lipid profile and atherosclerosis in rats

چکیده مقاله:

Introduction:Atherosclerosis is aprogressive disease that begin in childhood and progress duringadulthood. it is the the common cause of heart disease start by abnormal accumulation offatty material in the arterial wall and cause narrowing of the coronary arteries with reducein the blood flow and hypoperfusion of myocard.LDL has main role in transfering cholesterol from liver to vessel wall and triggeratherosclerosis but HDL has revese effect. So the former named as bad cholestrol and thelatter named as good cholesterol. The purpose of this study was to evaluate the effect ofanimal fats on blood cholesterol and Triglycerid levels in rats and compared withhydrogenated vegetable oil on them.Materials and methods:Twenty-four rats in three groups: including a control group , animal fat and hydrogenated fatwere studied in nine months and the serum levels of total cholesterol, triglycerides, HDL andLDL were determined by spectrophotometric method .Also aortic as well as coronary arterisbiopsy was down.Result:Experimental test results showed that a diet high in animal fat oil increases HDL levels andreduce LDL and increase HDL / LDL compared with the group receiving the hydrogenatedfat but both reveal increase levels of total cholesterol and triglyceride.Animal fats due to the presence of short chain and unsaturated fatty acids compared withhydrogenated vegetable oils that contain saturated fatty acids and trans isomers can beprevented atherosclerosis and plaque formation in the short term.However, due to an increase in total cholesterol and triglyceride of serum in the long termcan be the underlying atherosclerosis. Histopathologic study of tissue reveal inflammation inblood vessels in hydrogenated vegetable group but in group that receiving animal fat theblood vessels are intact.Conclusion:The results showed that animal fat is better than hydrogenated vegetable oil becauseRetard atherosclerosis (As demonstrated histopathologic findings). Then could replacehydrogenated oils in the daily diet.
