چکیده

I am Reza Bayat, a researcher and interested in traditional medicine. For many years, in the spring, I have been buying a kind of fragrant vegetable called Kardeh from the local bazaar of my city, Shiraz, and with the help of my wife, I make a local dish with it, called Kardeh pottage. Its usefulness is to prevent spring colds and to reduce seasonal allergies. During this time, I have tried to develop this formula and how to cook this pottage in an innovative way, as well as mastering it with different methods, as it can be used throughout the year using frozen Kardeh vegetables. In this article, I will explain how to process and prepare this vegetable for cooking the pottage or keeping it in the freezer for a year, which I have experienced over the past few years.
