Antiox idant compounds in fo od play an important role as a healthprotecting factor. Scientific evidence suggests th at antioxid ants reduce the risk for chronic diseases incl uding cancer and heart dis ease. Antiox idants are substances t hat can prev ent or dela y oxidative damage of lipids, proteins and nucleic acids by reactive oxyg en species, which inclu de reactive f ree radicals such as superoxide, hyd roxyl, pero xyl, alkoxyl and non- radicals such as hy drogen pero xide, hypochlorous, etc. T hey scavenge radicals b y inhibiting initiation and breaking c hain propag ation or suppressing form ation of free radicals by binding to the metal ions, reducing hydrogen peroxide, and quenc hing supero xide and singlet oxygen . These an alytical met hods measu re the radicalscavenging activity of antioxidants against free radicals like the ۲,۲-diphe nyl-۱-picrylhyd razyl (DPPH) radical, the superoxide anion ra dical (O۲), the hydroxy l radical (O H), or the perox yl radical (ROO). Paclitaxel is a m itotic inhib itor used in cancer che motherapy. It was discovere d in a U.S. National Cancer Institute program at the Research Triangle Institute in ۱۹۶۷.Taxus brevifolia an d named it taxol. Paclita xel is now used to treat patients with lung, ovarian, breast cancer, head and neck cancer [۱-۳].
