چکیده مقاله:
Meat inspection training has always been part of the curriculum of Doctor of Veterinary Medicine (DVM) or bachelor of veterinary medicine education around the world. Today, the concept of meat inspection goes beyond its classic application, which is based on ante- and post-mortem inspections, and covers more areas. Due to those changes, it is necessary to review the education in this area. In this study, meat inspection training in the Iranian DVM program, approved in ۲۰۱۶, is evaluated and its strengths and weaknesses are assessed in comparison with some international models and labor market needs. A review of the current curriculum shows that classical meat inspection is still the basis of meat inspection training and no new topics have been added to the curriculum. In addition to ante- and postmortem inspection topics, the issues of animal welfare, slaughter hygiene, and meat inspection regulations were common to all of the international universities surveyed in the meat inspection training curricula. In general, the important topics such as animal welfare, slaughter hygiene, quality control and assurance programs and systems, meat sampling and slaughter by-products are lacking in the current program, and beside those topics, more poultry meat inspection practice sessions should be addressed in the next revision of the meat inspection education.
